The Charentais alembic still is used for making all kinds of drinks and especially Cognac.

Phase 1: Fill the condensor with cold water and let the water flow smoothly.
Phase 2: Fill the Pre-Heater with mash (wine used for making spirit).
Phase 3: Keep the tap closed.
Phase 4: Fill the Pot with mash (wine used for making spirit).
Phase 5: Start heating the pot. Bring the temperature up to 82 degrees Celsius, and try to keep it at that level. During the process, the temperature will slowly rise as more and more alcohol disappears from the wine.
Phase 6: Vapours start to rise.
Phase 7: Save the distillate from the copper spiral in the condenser.
Phase 8: Transfer mash (wine used for making spirit) from the Pre-Heater to the pot by opening the tap. The Pre-heater could be filled several times with mash.

Charentais alembic still with thermometer

The Charentais alembic still is the most extraordinary copper still in our range that you can use for making all kinds of drinks. This still is a bit more expensive but also contains much more copper than our other stills. When you are distilling, you will soon notice that the hours fly by. The Charentais alembic still can save you a lot of time because this pot still contains an extra part that can already preheat the next batch of mash. If you look at the images, you will see an extra copper still in the middle, in which the second batch of mash is already preheated, making the distillation process much faster. As can be seen in the picture, you should place the middle pre-heater in a higher position, for example on a wooden box or table. You will only receive an electric hob and wooden stand with the 3 litre variant. The pot can be used on any possible heat source: from hob to gas burner (with the exception of induction). We recommend heating the 10 litre still and larger on a gas flame. See “additional information” for the dimensions of the selected product.

All stills are supplied with heat-resistant sealing tape and hose clamps for the cooling condensor. An instruction manual is included with the Charentais alembic still. The Charentais stills are manufactured in Europe and of the best quality available. The Charentais alembic still is officially used for making Cognac.

Making cognac is double distilling white wine

A commonly used still is the Charentais alembic still. This still is the only type of still allowed in the Cognac area to make real French Cognac. Cognac is a brandy, made from white wines. That wine must consist of at least 90% uni blanc, colombard and folle blanche grapes. Cognac is made by distilling white wine twice, resulting in an alcohol percentage of at least 40%. After the first distillation, the distillate is again poured into the still and heated and distilled again. This process is called double distillation. After distillation, cognac must mature for at least 2.5 years in oak barrels. This oak provides the characteristic vanilla flavour and tannins in the drink. Officially, a drink can only be called cognac if it meets the following conditions:
– Double distillation of white wine.
– White wine must consist of 90% uni blanc, colombard and folle blanche grapes.
– The drink must be distilled with a Charentais alembic still.
– The drink must come from the region of Cognac.
– The alcohol percentage must be at least 40%.
– The drink must have been aged in wooden barrels for at least two and a half years.

What is the advantage of a Charentais alembic still?

The big advantage of a Charentais alembic still compared to other stills is that the distillation process is much faster. This is because there is an extra copper pot still in the middle of the setup that already preheats a second batch of mash during the distillation process of the first batch of mash. So while the first batch of mash is being distilled, a second batch of mash is automatically heated. This allows you to distil different batches of mash much faster in succession and saves you a lot of time
